Whole Wheat Couscous with Cranberries is an easy side dish combining the nutty flavor of whole wheat couscous with tart cranberries for a taste that can accompany any meat based or vegetarian meal. This couscous can be served both as a warm side dish or a cold summer salad.
Couscous is a traditional Berber dish of semolina (granules of durum wheat) which is cooked by steaming. It is traditionally served with a meat or vegetable stew spooned over it. Couscous is a staple food throughout the North African cuisines of Morocco, Algeria, Tunisia, Mauritania and Libya.
Couscous was voted as the third-favorite dish of French people in 2011 in a study by TNS Sofres for magazine Vie Pratique Gourmand, and the first in east of France!
Recipe
2 1/2 cups-Boiling Water
2 cups Whole Wheat Couscous w/Cranberries
2 T. Butter (optional)

1) Place Couscous w/Cranberries into a bowl.
2) Pour the boiling water over the Couscous and stir to moisten.
3) Cover and let steam for 10 minutes. Fluff with a fork. Serve.
Great served with poultry, pork, and fish.
Options: Add sauteed fresh vegetable.
Can be served cold with Olive Oil and Lemon Juice as a refreshing salad.
Add fresh Peaches and Blueberries for a delicious cold dessert.
