Sweet Dough Mix is simple to make! Just add water and yeast to create delicious rolls and Danishes with this sweet dough flour mix.
Ingredients: Enriched Wheat Flour Bleached (flour, niacin, iron, thiamine mononitrate, riboflavin, folic acid), Partially Hydrogenated Soybean and Cottonseed Oil, Dextrose, Powdered Sugar, Sugar, Contains 2% or Less of Beta-Carotene (color), Cornstarch, Eggs, Leavening (baking soda, monocalcium phosphate, sodium acid pyrophosphate), Mono- and Diglycerides, Potato Flour, Salt, Sodium Propionate (preservative), Sodium Steroyl Lactylate, Soy Flour, Soybean Oil, Vital Wheat Gluten, Wheat Starch, Whey. Contains wheat, eggs, soy, milk.
Basic Recipes
50 lb Mix
18 lb Water (variable)
4 lb Liquid Whole Egg
3 lb 8oz *Yeast (compressed)
*If using dry yeast, use manufacturer's suggested usage levels and temperature recommendations.
Dough Temperature: 65-70 degrees F.
Mixing: 1 minute on low speed.
6 minutes on medium speed. (using dough hook)
Scale: 12lb 8oz pieces
Roll-In: 2lb 8oz of roll-in shortening
Folds: (3) 3-folds with a 20 minute rest period between each roll. Retard overnight for best results.
Bake: 360-375 degrees F Rack Oven: 335-350 degrees F.

19 lb Water (variable)
3 lb *Yeast (compressed)
*If using dry yeast, use manufacturer's suggested usage levels and temperature recommendations.
Dough Temperature: 80 degrees F.
Mixing: 1 minute on low speed.
15-18 minutes on medium speed.
Divide dough onto bun pans.
Retard overnight for best results.
Bake: 360-375 degrees F.
Rack Oven: 335-350 degrees F..
